I tend to stay away from nitrates because they are found in foods high in sodium.
The highest concentration of nitrates are in vegetables. They are naturally occurring, your body even makes them! Just because you (not you specifically) avoid processed meats like bacon doesn't mean your not getting a good dose of them on a daily basis. You get more from a cup of spinach than you do from eating bacon. You know those "nitrate free" meats on store shelves? They use natural nitrates from beets or celery.
