Most pollsters use voter sample files so they would just contact registered voter and screen for those that said that they already voted. I don't think that they would ever go to just polling early voters since a person could lie about being an early voter but you may see more polls that at least try to include a portion of them in the last few weeks of the campaign.

I can can see this being useful to alert campaigns when the vote is razor thin to amp up their GOTV.
