Sincerely I don't know so many Carnivals and street parades.
About carnival here the most famous are:
- "carnevale di Venezia" = carnival of Venice
https://en.wikipedia.org/wiki/Carnival_of_Venice
- "carnevale d'Ivrea" = carnival of Ivrea, famous for the historical representation and for the "battle of the oranges"
What is Carnival « Historical Carnival of Ivrea
here the pictures Battaglia delle Arance 2010 « Historical Carnival of Ivrea
- "carnevale di Viareggio" = carnival of Viareggio, which is mainly a street parade with floats. Lots of them are really satirical.
https://www.google.it/search?q=carne...Z9zUW-ENLTM%3A

About festivals I'm not sure, I have to think a moment about that...

I had amde a similar post a bit of time, i'm not willing to find but it was on the World forum. Anyway, it depends on what's your definition for street festivals. Alongside the aforementioned ones, there's also the Cento Carnival (The Carnival of Cento*-*Italian Carnivals*-*Culture and Entertainment*-*Travel ideas):

There's also the Oristano Carnival (Carnival in Oristano, Sa Sartiglia - Sardegna Turismo | Sardegna Turismo):

As i said, there aren't only Carnivals, would the Palio, San Firmin or the Semana Santa also count? As well as the countless religious "street parades" all over Italy and Spain?

Do things like 'Bonfire night' count? There must be hundreds Europe wide? I know that the Notting Hill Carnival is the biggest street carnival in Europe.

They aren't all that common here, i know there's a big one in London. Would religious street parade (a.k.a. processions) count? There's many of them throughout Italy and some of them are really particular

They have hundreds across the UK around this time, I couldn't tell you the best or the biggest, Notting Hill Carnival is probably in the top 15 though if not for its sheer size alone?
