Unless you have something to hide, you can instruct the Amsterdam post office to redirect your mail to wherever you prefer to receive it
And if the surprisingly-affordable costs of doing that in Germany are to go by, it might be a bargain for you. Any unpaid bills?

But I'm already out... Would they still redirect the mail?

No, no unpaid bills. Just parcel delivery!
Would that affect the new tenants at the address if I was to redirect the mail?

I'm afraid that I can't offer you a detailed response, such as whether you'd need to be there to make the application; and the internet often isn't quite as easy to navigate as we are given to believe. Therefore, may I suggest that you do as I do. And that is to apply an international flatrate package to your landline or handy (+31). Such arrangements are affordable and more than worth their cost. And, even if, at times, it's a little more expensive than calling abroad without one, you would have the assuredness of not having to worry about costs during such a conversation. But beware if you're with one of the parochial providers in the U S A. Some of them will offer such a package – but only to Mexico. Good luck
