So if I workout 3 times a day, for 20 minutes sessions, which is equal to 1 hour total time working out in a day, what is the difference of working out once a day for one hour?

Or is it around the same volume at the end? Is it healthier to workout the body more times throughout the day than once?

Time is not as important as intensity.

Walking non-stop for 5 hours is NOT as effective as burning fat and bulding muscle as 15 minutes of intense exercise.
