Yes! This guy I know--we jokingly call him Thunder Thighs--is like a professional level biker (has biked around the country, etc.). His legs are massive from biking, along. But he does PLENTY of uphill biking, too. Not just flat level biking.
You're not getting huge quads unless you have freaky genetics or unless you get on the juice. At least not huge like you see on bodybuilders. As mentioned, leg extensions are rough on the knees. If you do them, don't go overboard. Add squats or leg press to the routine and shoot for sculpted vs. huge quads. And always watch your form. Watch videos on proper execution or get advice from a trainer to avoid injury.
Leg extensions are great for a light warm up, or a few finishing burn sets at the end. Squats/leg presses are what give you the size in the kegs, assuming you have decent genetics.
