I am visiting AZ soon and will drive from Phoenix to the Grand Canyon. Those large rocks I see in videos of people driving to northern AZ, are they on the way to Sedona from PHX or between Sedona and Flagstaff ? I might drive to Sedona from PHX during the nightime and I don't want to miss such a sight.

You'll need to be more specific so we can help you locate them. Arizona has "large rocks" all over the entire state.

Yes, lots of rock formations in AZ. Monument Valley is the best known, but not on the way from Phoenix to the Grand Canyon. The Granite Dells sort of are:

p.s., I did not take the above picture. It is from fineartamerica.com with the name of Dave Dilli associated with it. Used under fair use, no copyright seems to be visible, but just in case.

Definitely take hwy 89A thru Sedona to Flagstaff. Beautiful drive as long as people don't use the road for testing their "sports car's" limits.
