I know I know... low crime, rural and inexpensive is quite a long shot but I’m trying anyway. Realtors do your thing

You have pretty much the whole center of the state to look at.

There's a lot. The Fort Meade-Wauchula-Zolfo Springs-Arcadia area in the southern interior along US17 would be my recommendation. Despite relative proximity to developed areas on the coast it's remained the same more/less for decades. There's still plenty of amenities nearby though so you're not completely isolated like the north/north central interior sections can tend to be.
