I'm interested in two things. What sort of dress is expected? Are jeans acceptable here, or do I need to dress up more?
What kind of wait times should I expect for a afternoon stop? I'm thinking Pizzeria Uno or Due might be a little too crowded, or trendy.
It's very casual....and the best pizza in Chicago IMO. Make sure to get the deep dish and if you like sausage make sure to get sausage on it, it's soooo good!
It's a casual pizza place. It doesn't matter what you wear. There can be as much of a wait as at Uno or Due, depending on other variables. The pizza is best at Malnati's, IMO. If I'm gonna wait somewhere, I'd rather be waiting for Malnati's than Uno/Due.
Lou Malnati's is casual, jeans are fine, wouldn't think there would be much of a wait. I've been there once and didn't think it was anything special. I prefer Giordano's stuffed pizza, but I digress.

Jeans are acceptable. It's casual sit-down like Chili's or Bennigan's.
The wait depends on the kind of food you order. If you order a deep dish or stuffed pizza, expect a 45 minute wait. Otherwise, standard 20 minutes or so.
ETA: oh, if you mean "wait" as in "wait to be seated..." I guess that depends on which one you go to and when. If you hit one of the downtown-area locations on a Saturday night when a convention is in town, you might have to wait. At most other times, or if you hit one of the neighborhood locations, you probably won't have to wait at all.
It's a deep dish thing. No matter where you eat it, unless it's premade and been sitting around, deep dish is going to take longer. Both because you need to parbake the crust first before you fill it (lest it be gooey and unbaked under the thick filling), and because the toppings are so heavy and dense that it takes longer to bake than traditional pizza.
