I use them for salmon cakes, though it would also work with cod or crab. With only the two of us sometimes we'll have a piece of salmon too big to finish. I shred it, add to the mashed potatoes along with an egg, some chopped onion and parsley and a little red wine vinegar, salt and pepper. Shape into balls, flatten, and refrigerate an hour before frying up in a little olive oil.
My mom always made sure there were leftover mashed potatoes so she could make potato pancakes the next day with sauerkraut and smoked sausages. I never cared for them but my dad loved them, so we (children) always ate what was on the dinner table!
My mom would make papa rellenas ( Cuban stuffed potato balls with ground beef). Since the taters are colder and stiffer they are easy to work into a ball breaded and then fried. Yummy!
I sometimes make with left over mash potatoes, mini shepard's pie.
I made a bit bowl of "neeps and tatties", which is mashed potatoes and rutabagas, more than I could eat, so now i have some leftovers in the fridge.
Need some help on how to re-use these as leftovers...how do you cook leftover mashed potatoes????
You made me hungry. My mother and grandmother used to make that. I will see what I can do about finding some rutabagas or turnips. I haven't had that in years. As for the left overs just make a patty and warm up in the frying pan.
