sounds like a relaxed and enjoyable Christmas. As much fun as family can be, sometimes a quiet day can be just as nice. For us, anymore, it is usually New Years day. We are huge football fans, so on NY day all the holiday excitement has died down. Everyone has returned to their homes (at least until our daughter relocates here) and we just have bloody Mary's, I do lots of finger food almost all day, but I do usually have lox and bagels for breakfast and we curl up around the fireplace and spend the day watching one game on top of another.

This year we will have Chicken Enchiladas, Spanish Rice, Black bean refried beans, Fruit salad and Guacamole and chips. None of our families are big eaters, so appetizers are not a big deal but I will still have some cookies, fudge, petite fours, crackers and cheese.

For dessert: Mexican chocolate cake and Cheese cake.

My BIL loves Bloody Mary's, so I decided to make him a couple of infused vodkas this year. I did jalapeno, and am about to put bacon vodka in a jar. My sister suggests that I add a box of Gas-X to help her deal with the jalapeno version.

Last year we had a nice rib roast also, I dont think I cooked it right..
It was still good.

This year i'm making Lasagna, Grandma and I, perhaps one neighbor.
There will be alot of leftovers and I will freeze them in indivual wraps to heat later..

We usually go to my husband's side of the family on Christmas Day, but there's a family feud going on, so we won't be attending this year. So....now I don't know what to make! I NEVER make Christmas dinner, it's always pot luck at the inlaws. AND we have to go to the airport late afternoon, so....??? I don't know!
AND!! It's next week already!!!
