And he says that the most routinely clean restaurants are fast food joints. The neighborhood favorites are many times the absolute worst places for sanitary conditions that have thick rap sheets that build up over the years.

....and that is precisely why I will not ever go to a restaurant unless it is a fast food restaurant.

I didn't want to hear that, fibonacci. I prefer mom & pop places in my neighborhood, and thankfully my family and I haven't got sick from any of them. While there are some food chains I like, I don't like most of them. Much of their food is loaded with fat, carbs, sodium and sugar. What's a person to do? Cook or BBQ, I guess.

Where i live we have local inspectors and the local televiuso do a reprot every friday on the scores and name the problems found.

Cleanliness is built into the restaurants when they are built. They design their equipment to make it easier to clean.

As for local independents serving healthier food, that is doubtful. If you buy a 8 oz hamburger in a fast food place or a local place, it has pretty much the same calendars.

For example, a local Chicago writer starts out an article about how unhealthy a White Castle hamburger is (approximately 2.5 oz). Yet, in a prior article, he lauds a 1# pastrami sandwich (high fat, high sodium, etc.) served with a fried potato latke served with sour cream.

Most people including myself who eat out anywhere are consuming rat and cockroach droppings to some degree.

Absolutly, and it's because fast food restaurants have strict policys in place and checklist upon checklist that need to be filled out daily.
Things changed drasticly since the Jack In The Box incident.

Which is why I like places where everything is out in the open. "Five Guys", you see the food prep and cooked right in front of you. Everything is gleaming stainless steel, and spotless white counters. I had a friend who worked for a very famous, exclusive restaurant..she quit, the kitchen was so disgusting. I haven seen that show, "Restaurant Impossible"...some of those kitchens were beyond.
