My great great grandmother Minnie Lee taught me to make my own egg noodles way back in the early 60's, and they have always been the very best in my chicken noodle soup. You cannot beat them, that soup is fabulous comfort food! Big fat hand cut noodles, it doesn't get any better!

Grandma Lee never bought stuff from the store when she could make it from scratch, and she made everything from scratch, the old fashioned way. Pies, donuts, cookies, cakes, soups, everything. The stuff that passes for food now she would not even recognize as food. The very idea of buying a frozen pie crust from the store would have floored her! She could whip up a huge meal for the whole extended family on her own well into her 80's, all of it made from scratch and the best food you ever had.

I have to wonder how many others refuse to cheat with those store bought noodles that can't even come close, and what recipes they might be using. If you could buy fresh made egg noodles anything like Grandma Lee's I'd buy them, but you can't.

Making your own is a lot of work, but it's more than worth it when you eat that soup!

I don't even think that it's a lot of work, it's just time consuming. This is an conversation I've had with my roommate several times. She hardly cooks because "it's hard." I explain that (whatever I'm making) isn't hard, but it just takes a little more time. She usually responds, "well that's basically the same thing."

I think that's a mentality several people have - if it takes longer than 5-10 minutes, it's hard.

Yes it does take longer, and the way I go about it it's work rolling that dough out and getting it just right, but I will NOT buy my noodles from the store! You are right, most people have gotten used to the packaged quick meal and don't want to invest more than 10 minutes in a meal. I used to work stocking dairy and frozen in a store, and I have to say, I would NEVER buy any of that frozen food they sell as meals. Yuck!

It does take time and can get rather messy, leaving more to clean up.

I make pierogies, if there's any dough left over I'll cut some noodles.

No it's easier to open a package and boil them.But I am sure they are tasty

I think it's great that you make them. It's especially great that you are honoring the women in your family when you make them.
I could make them, but I don't think homemade is that much better than the frozen ones I can buy. I appreciate not having the mess to clean up. I do not have a family tradition of noodle making in my family, so that's the difference, I think.

I don't make homemade noodles per se, but I do make homemade pasta now and again...
whole wheat, spinach, whatever I'm in the mood for...Love to make homemade ravioli and
lasagne noodles...have a hand-cranked pasta machine that I got while stationed in Europe
back in the late 70's. It's done as much travelling as I have...wouldn't trade it for anything...
Nothing better than freshly made pasta and ravioli...YUMMMM

I can buy Amish noodles of many sizes and varieties. While I used to do it with my grandmother, it is just not worth all of the efforts.

However, I hope to make some spaetzel noodles in teh coming months.
