2 pounds ground beef cooked and drained
1 large onion - chopped
1 can chilli beans - not drained
1 can black beans - drained and rinsed
1 can whole kernal corn - drained
1 can rotel original tomatoes
1 package taco mix
1 package original Hidden Valley Ranch dressing - dry
Water to make soup consistency.
Cook the ground beef and onion and drain. Put in a crock pot. Add the rest of the ingredients, including water, and cook for about 4 hours on low. Can add more corn - I usually do. Can top with sour cream and cheese if you want.
Oh, fish stew. I went to a new restaurant (newly opened) and had a bowl of terrific fish chowder last night. That said, I don't think that I'd make that for a cook off.
I'd probably do something with chuck. It's very tasty, cooked properly can be quite tender, most people will eat beef. The down side is that it's not really inexpensive.
I guess that I, too, vote for soup. You have to consider what people in your area might like.
Here's an article about a crockpot cook-off. It lists the dishes that were brought and a couple of recipes. The first, second, and third place winners were Jamaican Jerk Goat, Bison Heart Stew, and Bourbon Spiked Pumpkin Bread Pudding (Vegan).
This site links to some interesting recipes, such as Thai-Style Crockpot Curry and Indian-Style Crockpot Curry. It's a Rachael Ray Show site, so the recipes are probably good.
How about a chicken queso dip with tortilla chips on the side. It can be made, cooked and served out of the crock pot.
