I prefer steaming fish to baking it. I used to have a garlic cheese sprinkle to put on Tilapia before steaming. It came out tasting like Texas toast. Delicious!

I only bake it if I have caught a decent sized bass. I will insert sliced onions and lemon into the cavity, along with salt an pepper, the wrap completely in foil.
Most fish I prepare in other ways. Mostly we eat local Salmon, Rex Sole and Alaskan Cod. I prefer the Salmon grilled, the others pan fried in a little oil and butter.

Do you mind sharing how you do that? I have a rice cooker that has a steamer feature.
I like to use foil and cut up some veggies and place the foil on a baking sheet. Salt/pepper/olive oil.

I rarely do bake it, usually we grill it but if we do bake it, we do similar to you. No, I don't use the veggies, but I do use a little Olive Oil, salt, pepper and garlic. I will sometimes use lemon juice, but usually not til the fish is finished.

I bake in my Le Crueset baking pan, I love the way it comes out. I'm a sucker for those baking pans. I never do use foil.
The other way I like to cook it is pan-fried or grilled. Have never tried steaming, may try that sometime.
I have never baked fish before, I have broiled it, grilled it and done in a fry pan. I mostly eat shell fish however hubby likes salmon and Arctic char and those he likes rare in the middle. I do this in a fry pan on medium high heat, season the fish with salt, dill and lemon juice and I put a little olive oil in the pan. I cook the fish for 2 1/2 minutes each side.
