I made a roast chicken with roast potatoes, mushrooms and plantains. I can't eat it. I haven't eaten a full meal since last Wednesday. I've lost nine pounds and really can't afford to lose any more.
I have a lump on my head from passing out today and hitting my head on the coffee table.

Here you go.

Pineapple Pecan Chicken Salad

3 cups chopped cooked chicken breasts
1 cup finely chopped celery
2 Tbl finely chopped green pepper
2 green onions, sliced (about 3 Tbl)
1 tsp salt
Dash black pepper
½ cup mayonnaise (I use a little more)
½ cup chopped pecans
1 20 oz can pineapple tidbits, drained
2. Tbl lemon juice

Directions

1. Combine chicken, celery, green onion, green pepper, salt, black pepper and mayo in bowl; mix well. Stir in pecans, pineapple, and lemon juice.

2. .Chill for about 30 mins before serving.

Tonight, I didn't feel like cooking. Ordered two large pizzas from Pizza Hut. One for the kids, the other for me and hubby.

picked up a rotisserie chicken on the way home, fixed up some roma beans to go with, peach-bottom bread pudding with ice cream for dessert
