I've found that barbecue means a lot of different things to a lot of different people. Especially regionally.

Please say which option you voted for and what region you most identify with.

I think this is probably the most popular definition nation wide.

As for me, as a Texan, I chose slow cooked meat using indirect heating methods or course. Better smoke that brisket for 18 hours!

Obviously, option#3.

I've learned that anytime you're outside of the Southeast/Southwest, if someone says "BBQ" they usually mean what we Okies/Texans call "grilling out" as in a cookout in the backyard or by the lake. (In other words, be prepared to be disappointed by "BBQ" is you get above the Mason-Dixon....most likely you'll get grilled hamburgers/hotdogs.)

When I hear "BBQ" I think of Earl's Rib Palace in OKC (or Van's Pig Stand in Norman, Jake's in Chickasha, Smokin' Joes in Davis/Ardmore, etc.) or Cousin's in Fort Worth.

BBQ to me (and my folks/other Okies I know) generally means pork ribs, fried okra, greasy curly fries, baked beans, and sweet tea. (Now I'm hungry!)
