BBQ chicken salad with avocado, corn, black beans, tomatoes, cucumbers, and onions.

Fried pork steaks, chicken Rice-a-Roni, broccoli and black eyed peas.

All I had is 2 Manhattans and 4 left over English muffin pizzas. Not proud of it. DH is not home for dinner.
I had an awesome lunch, so wasn't feeling like cooking.
I ate lunch at a popular restaurant in town and had a Black eye pea burger, with avocado, sprouts, and red pepper aioli, on brioche, with a little salad. It was so fabulous.

Whole wheat cheese pierogies with some chopped onion, spicy chicken sausage and a mess of greens.

Pistachio halva if I feel like something sweet later.

I love black rice. It's nutritionally far superior to white or brown rice. It has a mild nutty, earthy flavor and a slightly floral aroma. The texture is more chewy than white rice, somewhere between wild rice and short grain brown rice. It turns a beautiful deep purple when you cook it. It makes a nice rice pudding, too. What's not to love about purple rice pudding?

I second on the black rice - it's delicious!
