I ended up having a very hearty serving of broccoli leaves and florets with squash, a baked potato with yellow onion slices and Ranch dressing and a sliver of leftover pork loin. The star of tonight's dinner was definitely the vegetables.

We made turkey larb meatballs on a bed of wilted baby chard/kale/spinach, topped with mint and cilantro with dipping sauces. Stir fried baby zucchini and squash with lime and chili garlic sauce.
