Im planning a birthday party and will be having a fish option.

Which would you rather be served at a birthday party if you could chose one?

Mahi Mahi with mango salsa

Mahi Mahi with tarragon beurre blanc sauce

Mango. Tarragon is an acquired taste and more people are familiar and comfortable with Mango. But whatever you do, serve it on the side!

Tarragon, but I'm not a huge fan of mango.

I definitely second Jkgourmet -- serve the sauce on the side, with perhaps a bowl of sliced lemons next to it. Some people don't care for sauce at all and would rather just have a squeeze of lemon.

Blackened with mango salsa. I usually do it with pineapple salsa, but mango would be good too.

It's an herb (tarragon), white (blanc) butter (beurre) sauce made with either vinegar or white wine as well.

I would go with the tarragon, if the mango isn't ripe it will taste horrible.
