Roasted veggies and potatoes. Salad. Cranberries.

We eat a lot of Indian style veggies but that might not work if you are having a traditional meal.

Potatoes, yam casserole with pineapples, mandarin oranges, and raisins, stuffing (we don't use broth or add meat to the stuffing, and make it outside the bird), asparagus in garlic-soy sauce, wild greens salad, cranberry stuff, variety of cheeses, sometimes broccoli, and if it's at my in-law's place there'd be pickled eggplant and artichoke hearts.

Depends on if we're talking "Doesn't eat meat," or someone who avoids lacto-ovo ingredients. In the caes of the former, almost everything, apart from the turkey, would be edible. I generally do a TON of fruit and vegetable accompaniments, in fact, the meal is MOSTLY fruit and vegetable accompaniments. I would probably have to make a point to use a non-dairy product in place of butter for baking and for some of the accompaniments, if the person didn't consume dairy, and my dressing is generally made using broth, but I could easily make a pan using vegetable broth if I knew in advance that a non-meat-eater was coming. There is dairy and eggs used in a fair amount of the meal, though, so if the person didn't do either of those things, it would limit what they eat to a few sides. Even the bread/rolls and baked goods would have those animal ingredients.

My hubby is vegatarian so I have lots of practice. You can give many recipes a little more substance by adding walnuts or almonds to salads or roasted veggies.

We like Qinoa with chopped celery, onions, and walnuts with cranberries. Use your favorite traditional spices as it is so easy to work with.

All the salads, all the veggies, and all the desserts. The stuffing, if I know a vegetarian is coming, I can make it without the chicken broth and it is always cooked outside the turkey.

If they are vegan, it will be a bigger problem because I use a lot of butter during the holidays.

My sides are all vegetarian -- now, vegan? Not so much. I do have some vegan options, but nothing awakens my love for butter like the holiday season.
