Tonight we have Cordon Bleu Chicken Casserole with rice and a green salad. To drink lemon water. For dessert 1/2 a pink grapefruit.

6 cooked chicken breasts
6 slices black forest ham
6 slices Swiss cheese
4 tbsp butter
4 tbsp flour
1/2 tsp thyme
1 beaten egg
1 3/4 cup milk
1/4 fresh bread crumbs (I use a bun)
2 tsp melted butter

Butter a casserole pan and make layers with chicken,ham,cheese.Melt butter,add flour,thyme,stir, and combine egg and milk and pour slowly over butter/flour/thyme. Cook,keep stirring til smooth and thickened.Remove and pour sauce over chicken casserole. Mix the 2 tsp butter with dry bread/bun crumbs and sprinkle over the sauce. Bake at 350 F for 30 minutes until heated well.

We are having left over braised pork shoulder, with the veggies and I think I will do a green salad of some sort, maybe cukes, tomatoes, mozzarella cheese and red onions.

Cabbage, bacon, potato, onion with cayenne and caraway. Small meatloaves pork/beef. Guiness. Mini pecan pies or pear tarts - SO's decision. After all the man of the house has to make some of them:>)
