Tofu chicken stir-fry of broccoli, bell peppers, onion, sugar peas and carrots. Served over Jasmine rice with chopped scallions and fresh cilantro. Fragrant Jasmine tea with a lemon slice to drink.

Leftover vegetable fried rice, chicken with broccoli for me. Hubby is having chicken thighs and split pea soup that my neighbor made.

Can't rep you again yet but sounds great! And I was just thinking I need to make that chickpea stew she posted! Soon, very soon I shall!

Pizza from a local place tonight. Pepperoni for the kids and it was supposed to be artichoke for the adults but they are out. Oh well, mushroom is a good back up plan.

I love heating up spaghetti and pasta like that!

My mom would sometimes make frittatas with left over spaghetti or ziti. She would warm it in a frying pan with some oil (some would get nice and crispy), beat a few eggs, add parmesan cheese and some black pepper then add it to the pan. Flipping was not so easy lol...I do this as well from time to time. Food always brings back good memories

Having FAT pork chops with shake and bake, mashed potato's and beans. A staple once a week as i love FAT chops with the bone..cheap meal as a whole. Enjoy your dinners all!
