In early Fall, I drove down to coastal GA. While there, I bought about 10lbs of wild shrimp from a shrimp boat off the coast. Since I have a vac seal machine, I froze them into meal sized bags.

Tonight, I made a shrimp scampi with great French bread and a lovely salad. Wow, perfect meal.

No, the New Orleans trilogy is celery, onions, and green bell peppers. I always add garlic to that though.
