Three nights late and in the wrong country, but I made a green bean casserole. Yes. Yes, I did. I did it the classic way -- 4 cups of canned green beans, 1/2 cup milk, a can of cream of mushroom soup, some pepper, half the French's onions in the mix, the other half on top for the last 5 minutes of baking. I already ate some of it, so let's call that dinner. It was delish.
I am cooking some collards....(they were just beautiful in the market today....I couldn't resist them). The bunch of greens was ridiculously large....I am cooking them all.....I wonder if I can freeze the leftovers????? Rice for "my guy" and boiled potato for me....and left over pork roast--sliced and heated in pork gravy.
The last of the leftovers today thank goodness! Even sending my DD's home with it. Food shopping in am!

Tonight, I made a turkey shepard's pie of sorts, by mixing turkey pieces, gravy, and leftover green beans, and topping with the rest of the mashed potatoes. I'm baking it in the oven and serving it with candied sweet potatoes, cranberry sauce, and bread.
went to a friend's house for Thanksgiving, so yesterday cooked my own small turkey here for housemate and me.... turkey sandwiches for the rest of the week.... along with the wild rice stuffing and giblet gravy..... mmmmm mmmmmm

me, too!! I cook a HUGE pot on New Year's day to go with the Hoppin' John....
