We spend time in southwest Florida (USA) and I have been having a blast catching (and eating) some invasive species that inhabit every pond and canal in the area.

Mayan Cichlids (from Central America) are hard-fighting critters that love small lures and flies. Sometimes called "atomic Bluegills" they are beautiful and delicious! Very similar taste and texture to snapper. A big one is 13".

Tilapia from Africa were brought to Florida by the state and are everywhere
. They are vegetarians but will also take small lures, flies and bait (they seem to like small piece of hotdog!). They are delicious, nothing like farm raised. They also are very easy to fillet.

A bit further east of s there are Oscars, Midas Cichlids, Bulls-eye Snakeheads (terrific eating), and Clown Knife fish.

Lots of fun!

Lion fish are showing up on menus around FL and GA. They have no natural predators, and must be speared by divers. They must be handled carefully, because of venom, but there is a big push to use them for culinary purposes, to try to eradicate them.
I knew a chef in Savannah who went fishing for them and put them on his menu.

There is a budding young movement to catch and eat the Asian Carp and Snakeheads travelling up the nation's freshwater river systems. They are certainly eaten in their home countries, so why not?
