I toss my wings in a bit of oil and season before baking, then dredge in sauce when they're done. Sometimes after dredging, I'll put them back in the oven for a few more minutes.
Baked chicken wings, sauce on while cooking or tossed on wings at the end?
I dry rub before baking and then do a spray of hot sauce after I remove them from the oven.
I place them in a bowl for the final wash referred to above.
It would depend upon the type of sauce. I always do mine in the oven after they marinate for a day or two in a hot sauce mixture, so they don't really need "basting" as they cook.
When I am doing something like an Asian style wing, that uses a sauce with some sweetness, they get basted towards the end of cooking.
If you use a sweet sauce, it will burn before the wings are cooked through, so sauce at the end.
I marinate the rascals in hot sauce and melted butter, 350F, 450F to crisp the skin when they are done, sauce on the side.
