I use to make my own sloppy joes and then turn it into chili mac the next day.

Anyone do this with other leftovers?

I used to make clean out the refrigerator soup. Give me a pork chop, piece of chicken, whatever, leftover vegetables, wilting or sagging raw, and I could male really good soup. Even my steak and baked husband liked it.

Mama made has over leftover roast. Is there a less expensive meat to make hash; cross rib would seem expensive, haven't priced,/purchased recently.

Thank you for the Thread, it's challenging sometimes what to do with dibs and dabs. Like the Post making soup. Tonight added leftover zucchini, onion to canned broccoli, cheese soup, added crunch !

When we have pot roast the leftovers either go into chili or beef stew.
I often made an omelette with the previous evenings leftover steak or pork chops.
My wife buys a rotisserie chicken once or twice a month and the leftovers make good enchiladas.

Not strictly a leftover but we buy ground beef in 1 pound size, make 2 patties for the grill out of half (or a little more) and the rest is cooked with taco seasonings for quick lunches.

Most often our leftovers become lunch the next day.

Left over ground beef seasoned for tacos becomes taco salad a day or so later. Left over roast beef or turkey becomes beef or turkey and noodles. Pork becomes BBQ pork sandwiches, skillet fajitas or fried rice. I often use chicken for a dinner salad. Left over mashed potatoes sometimes turn into potato pancakes.

The Thanksgiving turkey gets made into turkey enchiladas. Several pans of them that go into the freezer for heat and eat later in the year.

Roast chicken -- use the cut up chicken for chicken and spinach enchiladas and then sometimes use the carcass and make homemade chicken noodle soup. Leftover boneless sliced steak gets used for steak salads and leftover chili for chili cheese hotdogs. Leftover baked salmon gets used for salmon BLT on toasted sourdough bread -- one of my favorites.

Yesterdays roast may get sliced paper thin and become a panini with veggies.... not sure yet.
