Happy New Year everybody! I hope this year is filled with love, laughter and good health for all your loved ones.

Nothing special today. Just good old fashioned comfort food. Tuna casserole that I make with elbow macaroni, tuna, golden and cream of mushroom soup, some Italian bread crumbs, a little milk. Topped with american and Swiss cheese. Baked at 350. I did make a pecan pie too.

I hope everyone had a good New years eve. I sure did,but don't remember it: I was asleep by 8pm. I took a pain pill and that was the end of the night for me. Today will be different.

Hard to know what we are having: we are supposed to head to our granddaughters for football and a Mexican meal, but the weather people say 60% chance of ice. No way do we drive during an ice storm. I guess we sill play this by ear. If we stay home I might still have a Mexican meal.

To begin with, my DW and I split a really rich and tasty piece of cheesecake. Then, we both ordered the same steak dish. That dish was served up with a loaded baked potato and salad. Great restaurant and night!

We're having pulled pork BBQ for dinner tonight. My smoked shoulders turned out phenomenal last night- Put them on at 4:30pm and took them out at 1:00a.m.- First dish of the New Year!



For lunch I'm having leftover smoked trout. I made a smoked trout spread that was out of this world last night. 1c smoked trout pieces, 1/2c soft cream cheese, 1/2c soft gorgonzola, 1/2 lemon squeezed, 1tbs minced red onion and 1tbs minced fresh parsley. Man is it ever good. Hardly any leftover!

I hope everyone had a good NYE as well!! Didn't get to make the Mexican dinner last night so we're making it tonight instead. Casual and easy.

Tonight will be scallops wrapped in prosciutto, grilled and basted with butter. On the side is rice pilaf and slow roasted tomatoes.

Tonight is Hoppin John (we have a ton of it so I guess we will have very good luck this year!), baked pork chops, cole slaw, applesauce, and unsweetened iced tea to drink. Dessert is coconut cake.

A non-fat strawberry Greek yogurt, 2 toasted slices of whole grain bread with strawberry preserves and a mug of tea with a teaspoon of sugar & a bit of non-fat milk.
