I love Thai food. When I visit a place for the first time I usually order the basic Pad Thai because the success of that dish speaks to the rest of the menu for me.
I love Panang curry and spicy basil dishes are good too, like spicy basil with duck breast.
I don't know what weird rice you are referring to. Most dishes I have ordered (and it's a lot) come with steamed rice. Perhaps you ordered some version of fried rice by accident?
If you're unfamiliar with Thai food, jusr order Pad Thai. It's Thailand's equivalent to a cheeseburger and fries, it's what everybody eats every day in Thailand, and it is very likely to have an air of authenticity. Bonus -- probably the cheapest thing on the menu.
The problem with international cuisine is this: If you went to an exotic land and walked into an American Restaurant, what would they have? Anything like your mother or grandmother made for dinner? Of course not. The menu would have huge pieces of meat with a few badly prepared sides and a chef salad. It's the same in Thai restaurant -- the menu items are dishes that few people can afford to eat in Thailand, and just prepared ingredients and spices that would give them a Thai-like presentation.
Your chances of going into a Thai restaurant and eating what Thais eat every day are the same as your chances of going into the dining room of an American hotel and eating what's on an American family's dinner table.
Most Thai places will do a peanut-free pad thai. I don't really like Thai food, but I LOVE pad thai. It's just noodles, a spicy sauce, green onions, a little egg and chicken (well, I always get the chicken). There's usually some appetizers in my comfort zone at any thai place too. Even the authentic Thai places will usually have something like dumplings or egg rolls.
I didn't like Indian food the first few times I tried it, btw. Then I somehow ended up loving it. Sometimes you can acquire a taste for it. I THINK I would probably find some other Vietnamese foods to like if I didn't end up ordering pho every time - that stuff is awesome and can never bring myself to order anything else.

Drunken noodles (although it varies vastly from restaurant to restaurant)
Red curry (with shrimp or chicken) -- get jasmine rice on the side
Pad see ew (with shrimp or chicken)
