Since sushi is all the rage these days, I'm curious why Ramen love lags here.
In Asia, Ramen or soup noodle is all the rage everywhere. You got more ramen shops than sushi or burger joints. In Japan, ask anyone what they eat a lot and they will say ramen. Korea, it's the kimchi udon, and Vietnam it's the Pho.
I wouldn't call either one the "rage" here either BUT we love them both and get creative with both including other countries' version of both. (kimbap/thai ramen etc)

Noodle soup is the best thing on the plant!! I could eat phở three meals a day, everyday, and be totally happy. Yes to ramen and udon too! Love it all!
I love all of the cheap stuff at the hole in the wall noodle shops that I've discovered, but I'm kind of obsessed right now with a Seattle, Vietnamese street food spot called Ba Bar that serves "gourmet" phở. It's not snooty at all (great, fun ambience), they just use amazing ingredients and put a lot of time and heart into their broth. The oxtail phở is TO DIE FOR.
I found this video from Ba Bar (before discovering the place in person), while learning how to make phở in the Caribbean (we have zero noodle places here. Zero. It's very depressing. Can't live without it, so I had to learn.). Visited the restaurant on my next trip to Seattle and was hooked. It is very hard to find decent Ramen even in big cities. The best USA ramen places that I have been to are Ippudo in NYC and a small ramen place in Seattle International District. In contrast, I can find decent sushi places in any major city.
My spouse has spent a lot of time stationed in Asian countries with the military as a single person, and learned to prepare a variety of dishes while doing so. He can make better soups and sushi than most restaurants in our city. That said, Both ramen and sushi are only okay to me. Definitely not my favorite cuisine.
I love ramen, soba, and udon noodles. You can make quick delicious meals by cooking them in some broth and tossing in whatever you have on hand in the fridge.
Sushi? No effing way.
