It was one of the spice jars I inherited from my Mom's kitchen. Not knowing what it was, how to use it, it sat on my shelf for years..........

...........until this week when I put some in my fish mixings (today, kippers and avocado) for tortilla sandwiches.

We aren't to the point yet of "My name is Tamara and I'm a Tarragon addict,"........but probably well on the way.

Mmm, tuna tarragon sandwiches. I always liked the salad at Sweet Tomatoes/Souplantation with tuna, herbs, and shell pasta.

I love fresh tarragon or even the dried. I think my favorite use and I have a lot of them is in Chicken salad. I know most of you like your chicken salad with something sweet like grapes or crasins but I make mine without any sweet addition. Sweet is ok for just a basic chicken salad for a sandwich, but I like to make mine for a special lunch or dinner on a hot summer night. I use pasta, chicken (of course chicken, no one would use pork in a chicken salad) snow peas, a little celery, pecans or almonds, and fresh tarragon. That is about all I put in it and man or man is it good. Tarragon is also great with any vegetable. I have Mexican tarragon in my garden this year. It is doing great. I will use some tonight on our grilled veggies.

I use it in many things but always in scrambled eggs. Just remember to slightly "crush" it to get the most out of the flavor.

Tarragon is by far my husband's favourite. We grow a lot and use a lot. It is a very easy herb to grow and it even over winters here in the Northeast!

I know, right? There's nothing like fresh tarragon right out of the garden.

Tarragon potato salad: Diced potatoes, diced celery and onion, fresh tarragon, oil and vinegar.

Tarragon and garlic chicken: Brown four skinless, boneless chicken breasts in 2T olive oil. Add four quartered red potatoes, 12 smashed cloves of garlic, 1/2 C of white wine. Braise over low heat, covered, turning once, for about 30 minutes. Add a sprig or two of fresh tarragon (or rosemary), and cover and cook for another 5 minutes.

Mmmmmm, a spice or a salad garden......going have to include that in the house plans (any suggestions?).

As it is, I figure it had to be from Mom's kitchen, it's McCormick old style glass bottle and I don't buy that. So unless one of Mom's care takers bought it....it does go back to before Spring of 2009.
