I have a couple of Henkels, and a Chicago Cutlery sudoku knife (I have no idea what the blasted word is but it looks like sudoku so that's what I'm calling it OKAY?).
The Chicago Cutlery knife is awesome, though I need to refresh the edge every month or so. I don't use the steel thing that came with my cheapo knife set I got when we first got married. I do what mom always did: tilt the blade until it's almost flat against the back of a real china plate, and swipe it forward a few times. Then turn it over, and swipe it again a few times. After that, it'll slice a ripe tomato as thin as the edge of a dime without spilling a drop of juice til the slice finally falls to the plate.
I've had my Henkels for 20 years and haven't ever had them sharpened. I do the china plate trick with them once in awhile but frankly I haven't really needed to.
Global. It's Japanese and is the best knife I ever owned, especially if you're a woman with small hands. Super light, feels great in your hand, nice grip, nice sharp blade. Williams Sonoma stocks a good portion of the line. I have an 8 inch chef's knife, not the most expensive one -- I think it was about $110 -- there are definitely other models which are more.
But it still needs to be sharpened (especially if you use it a lot, which I do -- it's my go to knife for almost everything). I have a sharpening stone, though what I usually do is just bring it to the knife sharpening man at the local farmers market. Highly recommend.
There is also cutco knives. I've probably found hundreds of them at flea markets and garage sales. Usually in very good condition as the edge lasts for quite awhile and frankly it's more knife than most people need.
Reason why mention it as I found a set of vintage 12-17 cutco utensils at the flea this morning for a buck a piece. Perfect unused condition will probably sell them on eBay. I probably have two full knife sets with butcher blocks I have collected over the years for pennies on the dollar and sold many more. They are out there.
