That's a version of it. It would be more traditional with malt vinegar and the stock from boiled eels, but I can't even find eels over here.

Beans on toast (make sure the toast is buttered) is one of my favorite snacks.

It's just me and the hubs but we're having: Marinated bone-in Illini pork chops *about 1 inch thick* on the grill, baked potatoes, corn on the cob, green salad, I'm making pea salad and deviled eggs for him *gag* and I have some really nice bread I'll slice up. Desert will be homemade peach cobbler with vanilla ice cream.

Monday will be his birthday so I have to come up with something for that too....

I just ordered my first-ever pressure cooker from HSN and it arrived today. So I guess we're going to have something from there for the holiday weekend. Brisket sandwiches? A bakery near me just came out with some new buns that look soooo tasty, so that might work. Or pulled pork with some barbecue sauce? I'm thinkin'.

We just joined a local Country Club for the pool, tennis and golf privileges. I have always cooked for July 4th - - however this year I will enjoy sitting by the pool to live music, and pool side libations and appetizers, followed by a July 4th buffet that is sure to be good.

Both kids will not be home this year and we are meeting friends there. A different July 4th to be sure. As we enter The Empty Nest Phase.

Our city fireworks display will be on the 3rd and we have been invited to a friends to watch them over the lake but with the prediction of rain and I know how scared our doggy gets, I am guessing we will stay home. On the forth we are doing nothing. OUr daughter and hubby are out of town, (will get back that evening) and our granddaughters are busy, one with church activities and one with friends. As for what to fix, I will fix a typical July 4th dinner though: hubby will grill brats, I will make potato salad: He might have a beer or two while I enjoy my wine and watch the fireworks in DC on the tube. No traffic, no drunk drivers and we can keep our little doggy happy I hope.

We got this really awesome snack mix from when we went on vacation to Tennessee three weeks ago. It's easy to make; you just mix it with cream cheese. But the most fun part is we're going to our neighbors pool party on the 4th. They are such sweet people, but we will pay with a hangover on the 5th The husband can make killer whatever drink, and won't hesitate to take drink requests from their full bar. Fortunately we're both off the next day.

Nothing special, smoking a beef brisket, baby back ribs, sausages. Grilling corn on the cob, peppers, garlic bread, bbq beans. Dessert peach cobbler. Rum and Coke to drink.

I will go over my sister's for huge cook out. This year I am bringing Alabama Firecrackers. I made this for snacking while camping and it went over huge plus it's super easy to make. Also I am making a seven layer dip but I have been craving it!
