My favorite way to eat them is poached in eggs benedict (smoked salmon instead of Canadian bacon, with spinach sometimes added). I've never tried to poach eggs myself though, so at home I just scramble them.
Why only one choice? There are so many ways that are good and I would never choose only one. I mean if I am only given one choice I would probably go with custard or pastry.
I am on a wicked bender for sunny side up and over easy eggs with a runny yolk and something to drag that yolk into.
I couple of months ago I made a red sauce and had some left over and I had one over some pasta with red sauce and cheese. It was over the top awesome.
I did the same with some pasta and pesto a couple weeks ago.
Over medium. I like the yoke to be somewhat like a jelly. Done on the edges, but a little runny in the middle. Most places I ask for this will just give me a runny egg, like over easy - and that's okay too. But just a little more done is the way I like it best.
I can't really vote because it only allows one ... eggs are delicious in so many ways, and it depends on my mood, and what else I am having. Fried, soft boiled, poached, scrambled, over easy ... all have their places. There is no favorite really, it just depends on what I'm having.
