Using mayo is MUCH better than butter. It doesn't taste mayo-y, but it's got a nice, even golden brown cruch and isn't as greasy.

Mayo in place of butter browns and crisps nicely (why wouldn't it, after, with the oil and egg?), but I like the flavor butter imparts better. Both are good, though.

I like classic grilled cheese, but I also like a lot of the variants. When I studied in Ireland as a college student, the pub I used to eat lunch at did one that used a nice cheddar, and before putting the sandwich together and grilling it, would slice and quickly grill tomato, and add that grilled tomato to the cheese. Delicious.

My favorite is grilled cheese with cheddar and tomato on rye bread. That "inside-out" sandwich in the video looks good, too. Another variation of that is to sprinkle grated parmesan cheese on the outside of the sandwich before grilling. Delicious!

I make it ourdoors on my griddle. Start with thick slices of homemade bread, pre-toasted. Grill each on one side, with butter. Flip over, add sliced cheddar and Swiss; top with grilled onions and peppers, and/or a thick tomato slice. Sprinkle with chopped basil, thyme, chives, whatever you like.

Serve hot, open-sandwich style!

Good old NZ Cheddar for me, all melty and rich.

Bread optional, these days I love wholegrain.

Sometimes I will tweak with the addition of tomatoes and/or freshly ground pepper and Worcester sauce.

Sometimes like my grilled cheese with thin slices of tomato and/or avocado. Any kind of cheese. It can be Kraft Deluxe processed cheese, or Swiss or Colby Jack or Provolone or whatever. I just put whatever kind of cheese we happen to have on it; one kind of cheese or two or three.

I have fond memories of being 6 or 7 or 8 years old and a neighbor would take us to the country club where he had a membership and take us to the pool and then take us to the clubhouse for lunch. And I would get grilled cheese and potato chips and I thought it was the most delicious thing I had ever eaten in my life! My family never went out to eat, so that was my first experience "eating out."

Grilled cheese with a piece of ham on there,or a few strips of bacon. I can not eat just a grilled cheese anymore after doing these.

I like sharp cheddar on whole wheat. I don't want anything else on a grilled cheese. A grilled sandwich is a different matter.
