can you share how you cooked this roast??

(I like these rare and sliced very thin

they are very lean, so if cooked long (medium and longer) they can be dry and tough
unless you cook until it falls apart..low and slow

I do all roasts in the slow cooker (not crock pot) on about a 3 over night, then I turn it off and let it cool enough to go into the fridge for a few hours. Then about an hour before supper I put it back on and turn it up to the highest setting.
Moist, tender, smells incredible, and the potatoes and carrots are beyond perfectly cooked.
Everything comes out of the slow cooker and I make gravy with part of the liquid and use the rest for au jus.

ribeye steak w/ horseradish sauce, steamed mixed veggies and roasted little potatoes with rosemary & butter. there was some red velvet cake but we finished that off snacking on it in the afternoon. Life is short -- eat dessert first!
