Dosas with egg. I started eating them in Malaysia and decided I needed to learn to make them myself once I moved back to the USA. Great way to get protein and use non-gluten flours like rice, oat, and millet. I use urad dal (aka black gram lentil) and add the flour in a 1/1/1 mix (1 part dal, 1 part rice flour, 1 part some other flour, but not wheat).

The dal is soaked for several hours, ground up, and then added to the flours with enough water to get a thin batter. That is allowed to ferment overnight so one ends up with a sourdough-like flavor. Very savory and we use mint-cilantro cutney and hot sauce as a dip the next morning.

One scrambled egg fried in a circular ring so it fits on an English muffin. 1/2 slice American cheese with a slice of crispy fried spam. Squirt of ketchup, squirt of Tabasco. Done.
