Next weekend I am making the 1,200 mile road trip to Texas to visit family for Christmas. I wanted to know what are some good healthy snack and food ideas for such a trip?
I don't eat out anymore, except perhaps for subway every once in awhile so in the meantime I usually stick to eating light foods (as heavy stuff can make you sleepy) on long drives.
Currently I plan to make some turkey and ham sandwiches with bread that I made in my own bread maker. Also have a pack of trail mix, some raw sunflower seeds and plan to bake some oatmeal cranberry cookies. Frozen juice I will make to take in small containers and fruit cocktail. Of course nothing beats a good night's (or early morning sleep in my case) sleep on the day before the trip so I wanted to pack light foods that will keep me going throughout the trip. And no I do not drink those 5-Hour energy drinks.
What are some other healthy snack ideas that others here have taken for long road trips?
I pretty much take the type of things you do with the addition of some celery with peanut butter and some other cut up veggies. I also take packets of emergen-C and plenty of water.

It sounds like an aweful lot of starch and sugar. Bread, cookies, juice, fruit cocktail.
What you might do instead, is try slicing up that ham and turkey into strips, and a little chopped boiled egg if your family likes that (I can't stand it but it's healthful) and some slivered almonds or cracked walnut meats. Put some ripped (never cut) romaine lettuce into individual zip-locks, leaving room for a few slices of meat, cheese, and a tablespoon of the egg (but keep them seperate until eating time). Bring a squeeze bottle (like a ketchup container) with olive oil and vinegar, and let everyone put a splash of that in their own ziplock. Zip the bag closed, shake it up, and grab a fork. Instant light lunch. You can even have *a slice* of bread on the side, to enjoy your home-baked goodness without going overboard on the starch.

Very interesting ideas! I am a fan of olive oil so I will definitely consider that. I'm single so its just me I am packing for.
I've never tried peanut butter on celery before so I will have to give that a try. Always good to try something different.
The PB sandwiched between cucumbers is great too. I do prep it before hand and put it carefully in small ziplock bags. However I do always bring plenty of wet wipes.
We take dried cranberries and cherries, along with different kinds of nuts to snack on in the car.
