Nope, no corn in chicken salad. I use onions and chopped up radishes for crunch and a little bit of bite. Most people use celery but I'm not a fan so I leave that out.
This is the first time I've ever heard of putting corn in chicken salad in over 50 years of eating it. For me, it's onions, MW, black pepper and a sprinkle of Old Bay.
Its sweet, and has a crunch, like many other things people put in chicken salad. Why not. I've had it in a tuna salad. It also goes well in an asian crab and corn soup....
Recently, while driving around looking at the aspen leaves changing to gold, we had lunch in a little mountain town. The restaurant advertised home cooking and I settled on a chicken salad sandwich on a croissant which was described as "just like your mama used to make." To my surprise the chicken salad contained whole-kernel corn. What?? Did your mama used to make it like that?
To be fair, it tasted fine. But weird.
No. We never had corn in chicken salad. Celery? Yes. On whole wheat or Pepperidge Farm bread. Lettuce.
Maybe a slice of tomato. But absolutely no corn.
And never on a croissant. My mother made most sandwiches on store bought bread (see above).
My mother rarely made anything. I make chicken salad and other than chicken, I always include celery and mayo. I never use onion. Chicken is too delicate to overwhelm with strong flavors. I do like cold corn right out of a can so I would try putting some corn in the mix.
I've had chicken salad with grapes and I don't dislike it, I just don't think to add them to my own.
Now I'm hungry for chicken salad. <sigh>
While my mom rarely made chicken salad, if she did she might add chopped celery or maybe a tiny, tiny bit of onion but never corn. However, I add a variety of things, like saibot but never corn.
