Harpooned swordfish at the local fish market was caught yesterday. Long-line swordfish was likely caught offshore last week. Remember Sebastian Junger's Perfect Storm book and the George Clooney movie? That's offshore long-line swordfishing. They typically go out for a week+. Harpooned swordfish come from day boats. It's all about how fresh the fish is. Around me, harpooned swordfish costs 2x the mass market long-line stuff because it's so rare. If you don't live near a fishing port, I doubt you'd ever see harpooned swordfish.
It makes a huge difference with any kind of fish. There's nothing like cod or haddock caught that day as dinner.
I live in the same town as a big northeast fishing port and know some commercial, as well as recreational fishermen and speak to both weekly. I have also worked in restaurants and have never seen the distinction made.
When I'm expecting company for dinner, I almost always make one of two things, Chicken Dijon or Ham tetrazzini. They both can be prepared ahead of time, then popped into the oven while we're having cocktails.
This is for a formal situation in the dining room. If I'm serving family or cooking outside, then it's probably steaks or burgers and a bunch of sides.
Chicken cordon Bleu, rice pilaf and green bean casserole, Prime rib with roasted potatoes and roasted root vegetables, tossed salad, or Spaghetti, meatballs, sausage and homemade sauce and garlic bread also homemade.
My favorite because everything can be done in advance. Roasted Cornish hens with bacon on top, stuffed with wild rice. I do everything the day before and on party day, all I have to do is put them in the oven. I would also serve a salad and dessert. No real appetizer course but maybe shrimp cocktails would be good with it!
I like to try a new recipe to cook for company since I don't have time during the week. Monday-Friday hubby usually cooks something quick as he gets home from work first. Since it is just the two of us, we go out and try one of the many local restaurants on weekends.
I can only make a few things well, so it'd be Hungarian Goulash, Spaghetti and Meatballs (not sauce from a jar), Chicken Schnitzel, or Chicken Croquettes.
