When I'm expecting company for dinner, I almost always make one of two things, Chicken Dijon or Ham tetrazzini. They both can be prepared ahead of time, then popped into the oven while we're having cocktails.
This is for a formal situation in the dining room. If I'm serving family or cooking outside, then it's probably steaks or burgers and a bunch of sides.

Chicken cordon Bleu, rice pilaf and green bean casserole, Prime rib with roasted potatoes and roasted root vegetables, tossed salad, or Spaghetti, meatballs, sausage and homemade sauce and garlic bread also homemade.

I like to try a new recipe to cook for company since I don't have time during the week. Monday-Friday hubby usually cooks something quick as he gets home from work first. Since it is just the two of us, we go out and try one of the many local restaurants on weekends.

I can only make a few things well, so it'd be Hungarian Goulash, Spaghetti and Meatballs (not sauce from a jar), Chicken Schnitzel, or Chicken Croquettes.
