I had some smoked Gouda cheese that was beyond awesome and I think other smoked cheeses over the years that were great.

Cooked (Reheated) a couple of pre smoked turkey drums yesterday, came out moist and my buddy said it was good I hated it. First and last smoked turkey for me. All the other meats and fishes that I've had that were smoked I really felt like they ruined them.

Just me?

I'm known for my BBQ, so I'll have to say I love hot-smoked meats (except salmon). As for cold-smoked meats, bacon and salmon are at the top of my list.

Smoking can certainly be overdone, and if it isn't done properly, the meats can be coated with an acrid layer of creosote.

I use a mix of apple and oak for my BBQing, which tends to impart a milder, sweeter flavor.

I don't care for smoked meats or cheeses. It seems to be more popular in the south than here in NY.

Maybe it was reheating the smoked turkey drums that messed them up? Smoked gouda and smoked salmon are two of my favorite foods. I also really like smoked oysters. I eat them with cream cheese on a Ritz cracker.

A lot of it depends on the wood that is used for the smoking. A lot of my neighbors use mesquite wood because it is the wood that is most available in Southern Arizona. It produces a very strong smoky taste that can be unpleasant.

The second most common wood here is pecan. That smoke is significantly milder.

The last time I had smoked salmon, it made me feel sick. It was just a little too smokey for my liking.

I live in a city famous for BBQ, but I don't love smoked poultry or fish, neither of which are headliners on the BBQ circuit, here, though turkey and chicken are usually available. It's more about brisket, ribs, pulled pork, sausage, bacon, etc., here.
