After leaving the house at 8:30 yesterday morning to do some volunteer work, run errands, feed kitties for a good friend who had to leave for Iowa to be with a dying mom in law, shopping and getting home at 4:30pm we were too tired to even use the left over spaghetti sauce I had taken out of the freezer. Just putting all the groceries away and dividing the meats into serving size before freezing took over an hour. I ended up heating up a frozen pizza after adding lots of veggies. Tonight I am trying my luck at Thai chicken wings in the air fryer, making Asian cold slaw, heating up some home made egg rolls and steaming green beans. I guess yo could call it a mini Chinese dinner.
Preparing a slow cooker beef stew (cubed chuck roast, potatoes, garlic, onions, carrots and celery) for this cold rainy day today. It will simmer all day and be ready to eat this evening.
