In a great deal of pain today - since I'm utterly miserable, I'm going to have Squeezy Cheese (Sharp Cheddar) on Ritz Crackers and a glass of really cold milk.
Sometimes you just need a throwback snack. Although, my cracker of choice would be Chicken in a Biskit. Get well, mi amiga.

For dinner tonight, I am thinking leftovers from last night ... I made oven-barbecued boneless skinless chicken thighs with roasted veggies and a slice of homemade rosemary-garlic bread ...
I put the onions in too early (oops!) so they were a bit overdone, but still tasty. I ate all the veggies so will need to make more to go with the leftover chicken!
Tonight we're having Asian-style garlic beef, kimchi-fried rice, and key lime pie for dessert.
Yum!!! I have some wonderful kimchi in the fridge. I gave my sister a kimchi kit for Christmas one year, and since then she has been making the absolute best kimchi I've ever tasted. She found a traditional tongbaechu-kimchi recipe that uses salted fermented shrimp, and I've been supplied with excellent kimchi ever since.
