Not from personal experience, but someone told me it's important to have adjustable vents underneath the coals, as well as the standard ones on the lid.
We had a Ducane that was really heavy duty and probably would have lasted forever. It was a high end grill, very heavy, maybe commercial grade; I don't know. I just know the lid was really heavy, the grates were really heavy, and there was nothing flimsy anywhere. There was no stainless steel at all. I think it was all cast iron. They probably don't make them like that anymore.
Now we have a Ducane Affinity that my husband converted to natural gas. It has been great, but will need to be replaced next spring. The burner covers are disintegrating and the electronic igniter isn't working anymore. The grill was inexpensive enough that I feel like we got our money's worth out of it.
Or you can spatchcock those chickens for even cooking.
I'll second that. Spatchcock and can add a brick or two on top.
