You had me up 'til "bottled BBQ sauce," especially since you'll also be making pulled pork. Rotisserie chicken is good as is, usually, and with the rest of the meal, I think you'll be fine.
I agree. With the rest of the menu (e.g., mashed potatoes) I would prefer the rotisserie chicken as is versus the BBQ chicken. Why not have some of both so folks can have a choice?
I bought a Sprout's Market Chicken (rotisserie). It was perfect. Not greasy at all. We're getting one on NY Day. Some are better than others. Some have been too greasy, too dry, etc.,
Good ideas about skipping the BBQ sauce - I'll put it on the side, in case people want it.
my thoughts exactly: if you really want it, put it on the side. Normally rotisserie chicken has a wonderful flavor. To me bbq sauce would take away from that. Otherwise I think your dinner sounds wonderful and you need nothing more. someone mentioned something green. As long as there are green beans the green is taken care of and as much as we love our greens, not every meal requires salad, etc. OP there is so much you are fixing just enjoy: I hope someone is helping you clean up at least
I agree with BBQ sauce on the side, and you could, if you want to cook something, make some other sauces, like a green salsa or a more fruity/spicy thing and it would be chicken as you like it.
And I'd be fine with rotisserie chicken for guests, or as a guest, especially with all the other things you listed. And if you're not up to it, do what you can do well instead of pushing yourself. You'll feel better and have more fun and that's important.
Rotisserie chickens are such a bargain. We bought them several times, from one store, and found that we quickly tired of the taste. There was nothing wrong with them. Barbecue sauce might help.
We bought one from a different store and the taste was a little different, so that helped.
Your idea sounds good.
I love the rotisserie chickens from Costco, they are my go-to for making enchiladas suizas. They are made with the green enchilada sauce (made from tomatillos) doused in crema mexicana, topped with shredded jack cheese and baked until bubbly.
Thanks to everyone who repped this post - not sure which poster asked what crema mexicana is - so posting here.
Crema mexicana is a table cream, similar to the consistency of crème fraîche, it is sold in plastic bottles in the supermarkets in the Latino dairy section in our area. The best one I have bought is Cacique brand. They are better known for their solid cheeses like queso fresco, cotija, Oaxaca, etc.
ETA: this is a link with product description, with a product finder based on zip code. Apparently Walmart carries it too.
