Tonight will be small cups of broccoli & cheddar soup; Instant Pot baby back ribs; collard greens; dinner rolls and cherry pie for dessert.

Over thick boneless pork chops off the grill. SO will need to break out the bbq jacket. Lumpy mashed potatoes with butter and nutmeg, horse radish sauce and the never ending bowl of green.
Alm - how about Bienenstich for desert?

Tonight I am making eggplant bites. On slices of eggplant I will put, goat cheese, salami, spinach, pesto, olives, cherry tomatoes, etc. A variety of toppings, plus a slice of garlic bread.

Tonight my big clean out the crisper Ham and peanut fried rice with lots of ginger and garlic and:

Sugar snap peas
Green pepper
Carrots
Celery
Brown mushrooms
A few Brussels sprouts, sliced
Green onions

This is how my pork shoulder picnic came out. We really liked it and the recipe will be saved.

Tonight just hot dogs and carrot sticks.

Magic, I am DROOLING over that picture!! Was it hard to make? I would love to try it although my roast would have to be a lot smaller than the 8-9 lbs. that the recipe calls for, since I'd be cooking for just 1 or 2. What's the exact cut of pork called at the grocery store?

As for me, I JUST finished all my grading for fall '19 and am FINALLY going to go make dinner! To heck with the carrots tonight, they would take 40 minutes and I am hungry. I'm going to cook the 2 remaining pork chops on the stovetop and make quicker-cooking veggies. THEN I am going to relax and mentally prepare for tomorrow's storm!

The ones I buy are marked as pork shoulder picnic roast. I pick them up at Price Rite for 88 cents a pound. I have seen them at other stores for not much more. The recipe is very easy. I only marinated mine for four hours. Next time I want to try marinating overnight.
It does make a lot but I portioned it out and froze enough for two meals. I am thinking tacos and maybe mixing it with barbecue sauce for pulled pork sandwiches.
