What is your favorite variety? I like sweeter apples, Ambrosia was my favorite but they're too expensive. I've recently discovered Opals, which are like sweeter Golden Delicious.
Though I like all except Yellow Delicious, my favorite variety is Empire, followed by Gala. IMO, the Empire is a perfect, delicious blend of sweet-tart.
There's something for everyone when it comes to apples.
I love McIntosh apples. Unfortunately here where I live they have a very short season. Usually they appear after Thanksgiving and disappear short after X-Mas. Right now they are nowhere to have. Not in season, I was told...
No other apples taste like McIntosh.
It depends on what I need them for. On a paper thing short bread crust as Tarte de Pommes - Granny Smith. With melted onions and bacon as side for grilled chicken - whatever is in the pantry.
I buy whatever apples are on sale as I generally like all of them, including the much maligned golden delicious apples. Over the course of the year, I probably have 20+ different varieties over the course of a year.
I like to bake apples along with some combination of rhubarb, cherries, raisins, craisins, or prunes and seasoned with cinnamon and nutmeg and drizzled with maple syrup and butter.

Favorites: Snapdragon, Ruby Frost, Winesap. I've also enjoyed Arkansas Black. And for making chunky pink applesauce, Rome.

Yes! And have you done a grilled ham and Gruyere with thinly sliced apple? Yummy!
I like Gala, Pink Lady, Fuji, and most of all Honey Crisp but HC is soooo expensive here - seems like never under $3 a pound and usually $4.
