I have a question for those of you in the restaurant industry. When I order sour cream in a restaurant, I notice it tastes better than store bought brands, which are relatively tasteless. My favorite store bought brand is Daisy. Does anyone know if they add something like lemon or lime juice? And yes I mean sour cream, not crema (mexicana). I imagine some restaurants water it down.

It taste better maybe because you are hungry and in anticipation of food someone else is cooking for you?
They buy the supply in places like Sysco, USFoods, Costco, Sam's etc.
One often used is Crowley brand

You are buying Daisy, which is pretty much pure (my fav too).

Because it's not hard to make a bulk and many restaurants either make their own or buy from a local dairy distributor that isn't the supermarket brands. I'm sure lots of farmer's market and creameries sell sour cream, yogurts, and milk to local restaurants.

Actually, nearly all of the sour cream that we purchased for the kitchens I operated were from local dairies. It was much less to purchase direct than order through one of the large foodservice chains.

I think just the opposite. I just got a taco salad from Wendy’s this week, and I thought the sour cream seemed diluted and tasteless.

I have noticed that some store bought sour cream has more flavor than others, but I’m bad about remembering which kinds I like.

Well, Wendy's is a fast-food joint. Can't expect quality sourcream.
I buy Daisy. It's pure.

Seriously, it doesn't matter, really. It's the processing. Like with butter. There are great butters and crappy ones. Same with cheese. All are dairy, no?

I use Daisy as well, but I would briskly stir any sour cream. I can't imagine not stirring it since the effect is dramatic. I believe that the first time I did it was either to use it on a baked potato or prepare a dip.
