I think the skin is very tasty, on grilled or fried, smoked salmon

Uh uh. I don't like it.

They make a sushi roll with supposedly 'crispy salmon skin', but I've had one too many where it wasn't crispy at all. Yuck. No more of that please.

I'll just stick to the inside of the fish.

If barbequing, leave the skin on and when it's finished, the fish itself just slides right off the charred skin.

I've found if you cook salmon in the oven, with the skin on, it seems to give it a bitter flavour, so tend to cut it off before baking.

Each to their own though!

I don't eat the skin. I purposely buy salmon filets witht the skin removed. I love smoked salmon but no matter how it's prepared, I wouldn't eat the skin. Same for chicken too.

I usually do. The skin can be the best part if it's cooked just right, nice and crispy.

No, I don't eat it, but I like to cook it w/ the skin on. Gives flavor.

I love salmon, but I don't eat the skin. I could eat salmon 4-5 days/week, but grow tired of making it the same way. The 2 ways that I make it are:

Sprinkle with lemon juice, spray it with "I can't believe it's not butter" and then sprinkle Old Bay seasoning on it and bake it. The other way is the same except for Old Bay, I sprinkle it with dill seasoning.

Can any of you offer up new ideas on how to make it since I eat it so much?

Texan, try a search. There was a lo-ong thread about salmon recipes.

I like to cook with the skin, and might nibble a little of it, but quite often I'll just give it to the cat.
